“Eat More Ice Cream.”
She wanted us all to wear bright colors.
Not the usual black at her funeral.
That would be too sad and un-Cindy like. Cindy wanted us to celebrate LIFE, not sorrow about our loss.
Cindy threw herself a huge (and I mean huge) party in her final days, so she could see everyone one last time and have F-U-N.
That was Cindy.
Cindy was one of those rare friends who always left you better than before you met. Your mood was brighter, your outlook better. Her infectious smile, quick laugh, her brilliance and her passion to support amazing causes with her huge heart and tons of gusto, her unwavering faith, all made you want to be more like her in every way (except she was a Florida Gators fan, and I’ll forgive her for that).
In the final days of Cindy’s brave journey, her sage words of advice to all were to, “Eat more ice cream.”
I’ve taken it to heart and probably will always think of her and smile when I dip into a scoop. Which I’m doing a lot of lately.
That green light was the only excuse I needed. But I feel the need to branch out a bit on my ice cream intake.
So in Cindy’s honor, I’m giving you what I believe to be the easiest recipe ever.
ICE CREAM BREAD
There are just two ingredients:
1) A pint of softened ice cream – whatever is your favorite
2) 1 and ½ cups of self rising flour
Mix them together
and pour into a greased and floured bread pan
and bake at 350 degrees for 45 minutes.
That. Is. It.
Eat More Ice Cream.
